Add mirin, sake and soy sauce to a saucepan
Raise heat to medium high and stir until bubbles start to form at the surface
Lower heat until lightly simmering
Cook for about 5 minutes until the flavours meld together
Taste for seasoning and add sugar if desired, continuously stirring until the sugar dissolves
Turn off heat and set aside
