  1. Mushrooms

    Wash and dry thoroughly

    Tear into quarters

  2. Onion

    Dice small

  3. Garlic

    Slice thin

  4. Cheese

    Add ricotta to a bowl and whisk for about 5 minutes to beat some air into it

    Add pecorino and mix

Cook

  1. Mushrooms

    Pre-heat pan on high until ripping hot (about 1-2 minutes)

    Add extra-virgin olive oil and swirl to coat the entire surface area of the pan

    Add mushrooms

    The mushrooms will start to boil in their own liquid. Do not touch the mushrooms until all that liquid has evaporated and sizzling replaces the sound of steaming (about 5-10 minutes)

    Begin to routinely stir the mushrooms to ensure even browning

    Fry until golden-brown

  2. Aromatics

    Lower heat to medium-low

    Add onion and cook until translucent, (about 3 minutes)

    Add garlic and cook until fragrant (about 1 minute)

    Turn the heat off

    Add wine

    Raise heat to medium and bring to a simmer

    Leave the alcohol to cook off while preparing the pasta. If they pan gets too dry then add a ladle of pasta water

  3. Pasta

    Place a pot of salted water on the stove and bring to a boil

    Add pasta

    Cook to 2 minutes under package instructions, stirring occasionally

    Add a ladle of pasta water to the cheese mixture and stir to combine

    Drain pasta, reserving leftover cooking water in a bowl

    Add pasta along with a ladleful of pasta water to the sauce

  4. Finish

    Stir and toss the pasta until cooked through, adding pasta water if the sauce begins to dry up

    Add black pepper and nutmeg

    Taste for seasoning

    Serve
